Whether you're at a holiday party, a game day gathering, or a casual hangout with friends, a cheese ball is one appetizer that's just about guaranteed to draw people in. Creamy, cheesy, and super savory, cheese balls can also make for a striking centerpiece with a little extra finesse. In this pumpkin cheese ball recipe, I lean into both that cheesy, savory flavor appeal and visual appeal by way of a fun pumpkin-inspired shape. The base of the ball boasts cream cheese and pumpkin puree as star ingredients, which provides a rich, slightly tangy flavor profile with just the right hint of earthiness (and slight orange tint, perfect for the occasion). A few spices and freshly chopped sage make for the ideal autumnal seasonings, and a layer of shredded cheese on the outside of the ball not only provides more of that distinct orange color, but it adds a touch of sharpness to balance well with the creamy interior.

While there's no denying that the savory flavor of this cheese ball will have your guests coming back for seconds, the sheer visual intrigue of the pumpkin shape will delight them at just a glance. My favorite part of the whole recipe is using string or kitchen twine to create pumpkin ridges, which is a surprisingly simple technique that goes a long way in crafting a realistic mini pumpkin. A bell pepper stem stands in for the pumpkin stem, finishing the adorable and festive cheese ball without any hassle.

Gather the ingredients for this pumpkin cheese ball

To make this recipe, start with cream cheese and finely shredded cheddar cheese. Make sure to buy the cream cheese in block form versus a whipped variety, which will not firm up properly. To play into the fall theme a little more, you'll also need some pumpkin puree, and both canned or homemade will work. Since this is a savory cheese ball, make sure you're buying plain puree and not canned pumpkin pie filling. You won't need the whole can, but you can use leftovers to make other fun, fall-themed recipes. To round out the cheese ball, you'll need fresh sage, paprika, garlic powder, and salt. Finally, you'll need a bell pepper with an intact stem, and you'll only be using the stem for this recipe. Feel free to use the actual pepper for other recipes, or simply slice it up and enjoy it alongside the cheese ball.

Step 1: Add cream cheese, pumpkin, and seasonings to bowl

In a large mixing bowl, add the cream cheese, half of the cheddar cheese, pumpkin puree, paprika, garlic powder, salt, and minced sage.

Step 2: Use a hand mixer to combine the ingredients

Thoroughly combine the ingredients using an electric hand mixer on high speed or stand mixer.

Step 3: Form the mixture into a ball

Form the cheese mixture into a ball shape and place it in a large bowl.

Step 4: Refrigerate the cheese ball

Cover and refrigerate the cheese ball for 2 hours.

Step 5: Coat the ball with the remaining cheddar cheese

Sprinkle the remaining cheddar cheese over the cheese ball. Rotate to coat the ball on all sides.

Step 6: Wrap the cheese ball in plastic

Place the cheese ball onto the center of a piece of plastic wrap. Carefully fold the plastic wrap around the cheese, reshaping it into a ball as you go.

Step 7: Wrap the cheese ball with twine to create pumpkin ridges

Using a long piece of string or twine (or multiple pieces), wrap tightly around the cheese ball, keeping the twine as centered as possible. Repeat the wrapping process a total of 4 times, trying to space them out as evenly as possible, to yield 8 total pumpkin ridges.

Step 8: Chill the cheese ball

Place the cheese ball in the refrigerator to chill for at least 4 hours, or up to overnight.

Step 9: Remove the twine and plastic wrap

Remove the twine and plastic wrap.

Step 10: Cut bell pepper stem

Cut the stem from the bell pepper.

Step 11: Place stem onto the cheese ball

Press the stem into the top of the cheese ball (serve the rest of the bell pepper with the cheese ball or save it for a different use).

Step 12: Serve the pumpkin cheese ball

Serve the pumpkin cheese ball with crackers or as desired.

What other seasonings could I add to this pumpkin cheese ball?

There are several ways to season the pumpkin cheese ball, should you want to switch things up or use what you have on hand. In this recipe, I use regular paprika, which has a very mild and slightly sweet flavor profile. If you want to add more smoky notes to the mix, use smoked paprika instead. Onion powder or granules would play well here, adding a savory note without the sharp bite of fresh onion. If you do want to use something fresh in the allium family, go with chopped chives or green onions.

Add a bit of heat to the mix by folding in finely diced jalapeño or Serrano peppers, but note that a little will go a long way. Or, simply add a pinch or two of cayenne pepper. To lean more into classic fall flavors, add about 1 teaspoon of finely chopped thyme or ½ teaspoon of rosemary along with the fresh sage. If you have dried herbs, use ½ teaspoon of thyme and ¼ teaspoon of dried rosemary. Finally, a small amount of dry mustard would pair well with the cheddar and help offset some of the richness of the cheese ball as a whole — just about ¼ teaspoon is all you need.

Why is my cheese ball not holding its shape?

Since we're creating a ridged, pumpkin-inspired effect with this cheese ball, it's a bit tricker to get it to hold its shape (compared to regular, spherical cheese balls). The biggest factor in ensuring the cheese ball will hold its shape is making sure it's firm enough. To start, if your pumpkin puree is too wet, it can keep the cheese ball from firming up properly. All brands of puree are a little different, but a helpful trick is to let the puree drain in a fine mesh strainer before adding it to the cheese mix.

Another potential problem is using either whipped cream cheese or letting the block cream cheese get too soft. Let your blocks sit on the counter for about 30 to 40 minutes, so they are soft enough to blend easily but are not overly soft or melty. You'll be able to tell when the cream cheese is ready by pressing it with your finger, and it should give just enough for a small indent. When using the hand mixer to combine the ingredients, try to avoid over-beating, as this allows excess air into the mix, which may make your cheese ball a bit too fluffy and difficult to shape.

In terms of chilling, you need to give the wrapped, twined cheese ball at least four hours in the fridge, but the longer, the better. I recommend planning ahead and allowing the cheese ball to chill overnight. That way, when it comes time to unwrap, those ridges will be nicely defined and the overall cheese ball will maintain its shape better as it sits.
