Gather the ingredients for Greek pita pizza

To make this recipe, start by picking up some fresh produce. You'll need lemon, garlic, English cucumber, grape tomatoes, and red onion. "I like to use English cucumber and grape tomatoes here because they are less watery, but you can easily substitute other cucumber and tomato varieties." 

In the dry goods area of the store, grab some canned chickpeas, tahini, Kalamata olives, and Greek pita bread. "Greek pita bread is pocketless and is perfect for these pita pizzas," Hahn explains. Then, just get some condiments and spices that you may already have on hand — salt, cumin, garlic powder, oregano, olive oil, apple cider vinegar, and water.

Make the hummus

Before you make the hummus, go ahead and preheat your oven to broil. Then pull out a large food processor and add the chickpeas, tahini, water, lemon juice, garlic clove, salt, and cumin. Blend until smooth. "If you don't have a food processor, you can make this in a blender instead," Hahn explains. The hummus should be light and creamy and will be perfect for your pita pizzas.

Make the salad topper

The fresh salad topper is a snap to make. Grab a medium bowl and add in the cucumber, tomatoes, red onion, olives, some olive oil, vinegar, oregano, salt, and garlic powder. Stir to combine. "This salad combination also is a great side salad recipe to have in your back pocket the next time you're looking for a fresh side dish," Hahn shares.

Assemble the pitas and serve

The pitas will be lightly toasted before you add your toppings. Brush the tops of the pita bread with some olive oil and a light dusting of oregano, salt, and garlic powder. Then, lay the bread on a sheet pan and put them under the broiler for about 2-3 minutes until golden brown. "Stay close by because using the broiler can be a mistake if left a minute too long," Hahn remarks. 

Spread a layer of hummus on the pita bread, then top with the salad mixture. "You can cut the pitas into small triangles for an appetizer board or leave them whole for people to pick up. They pair well with other appetizers or a big pot of soup."

  • ¼ cup tahini
  • ¼ cup water
  • 1 lemon, juiced
  • 1 garlic clove
  • 1 ½ + ⅛ teaspoons salt, divided
  • ½ teaspoon cumin
  • 1 English cucumber, diced
  • 1 cup grape tomatoes, halved
  • ¼ cup red onion, diced
  • ¼ cup Kalamata olives, chopped
  • 1 tablespoon + 2 teaspoons olive oil, divided
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon + ⅛ teaspoon oregano, divided
  • ¼ teaspoon + ⅛ garlic powder, divided
  • 6 Greek pita breads
Directions
  1. Preheat oven to broil.
  2. Add the chickpeas, tahini, water, lemon juice, garlic clove, 1 teaspoon salt, and cumin to a food processor. Blend until smooth.
  3. In a medium bowl combine the cucumber, tomatoes, red onion, olives, 1 tablespoon olive oil, vinegar, 1 teaspoon oregano, ½ teaspoon salt, and ¼ teaspoon garlic powder.
  4. Brush the tops of the pita bread with the remaining olive oil and dust them with remaining oregano, salt, and garlic powder.
  5. Put the baking sheet under the broiler for about 2-3 minutes until the pitas are golden brown.
  6. Spread a layer of hummus on the pita bread, then top with the salad mixture and serve.
