"Ode To Joy" Infused Tequila Cocktail
The "Ode to Joy" cocktail came about as a slightly tongue-in-cheek affair. When Mr. Rain's Fun House opened, four years after the previous Latin-inspired restaurant had closed in our space, we still had a string of guests asking about their tableside guacamole. I would explain to our guests that the item was not available nor consistent with our menu. However, I would assure them that we carry fresh avocados, and that I could offer them something perhaps as memorable.
The cocktail calls for poblano-infused tequila blanco — we use Oro Azul. To give the cocktail more complexity (and give the guacamole brethren their fix), we rim the glass with a flambé of cumin, paprika and sea salt.

Ingredients
- 1 1/2 ounces poblano-infused tequila blanco
- 1/2 ounce Cointreau
- 1/2 ounce fresh lime juice
- 1/4 ounce agave syrup
- 2 slices ripe avocado
- 1 teaspoon Absinthe
- 1 teaspoon ground cumin
- 1 teaspoon sea salt
- 1 teaspoon paprika
Directions
- Muddle avocado in the bottom of a shaker. Combine all ingredients into the shaker with ice, excluding the garnishes.
- Begin flambé garnish: combine cumin, salt, and paprika into a dish. Add absinthe and ignite all the ingredients. "Cook" until absinthe has been dissolved and ingredients are dry. Rim the coupe glass with flambé garnish.
- Shake ingredients and strain into the coupe glass.
