Make This Tonight: Porn Bread Baked In A Pipe

Octavio Becerra's Hollywood haunt Acabar opened last summer and they're already making waves with a stunning dining room and a menu that bills itself as "global local" and "inspired by the Spice Trail of the French Colonies" – which is to say that the food easily falls under the label of "French Imperialism."

There's something from nearly every territory that the Frenchies took over, but the true standout seems more American South (Louisiana Territory, perhaps?) than St. Tropez. It's called Porn Bread, and it's an awesome combination of biscuit-like dough laden with aged cheddar, bacon and yams. How did it get such a provocative name? Becerra explains: "The porn bread is so filthy and disgustingly good, the only thing I could have called this bread was porn, obviously..."

Now you get to try it at home. One note: the recipe calls for a non-galvanized metal pipe (easily purchased in the plumbing section at Home Depot, Lowe's or your local hardware store), but you can also just do a multi-layer foil wrap on it and it should yield similar results.

Make This Tonight: Porn Bread Baked In A Pipe
Total time: 1 hour, 20 minutes
Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon herbes fines
  • 4 tablespoons butter
  • 1 1/2 cups aged Vermont cheddar
  • 1 small sweet potato
  • 6 strips cooked bacon
  • 1/4 cup plus 2 tablespoons creme fraiche
  • 1/3 cup sliced scallions
  • a generous pinch coarsely ground black pepper
  • 1/4 cup whole milk
  • non-stick cooking spray
  • 1 stick butter
  • 3 tablespoons almond honey
  • fine sea salt
Directions
  1. In a food processor, mix the softened butter with the honey and salt to taste, then reserve in the refrigerator until ready to use.
  2. Place the dry ingredients, the cubed butter and bacon puree in the freezer for 20 minutes.
  3. Mix the semi-frozen dry ingredients, butter and bacon in a large mixing bowl until well-incorporated.
  4. Add the scallions and cheddar cubes and mix well.
  5. Create a well in the center of the mixing bowl and pour in the milk.
  6. Mix ingredients with milk until just incorporated. Do not overmix.
  7. Pre-heat oven to 375°F.
  8. Wrap an 8-ounce portion of the bread mixture in parchment paper, sprayed with cooking spray to prevent from sticking. Wrap the parchment-wrapped mixture in foil and gently shape into a sausage shape that will fit snugly inside a 2x8'' metal pipe.
  9. Place the wrapped bread mixture in the pipe and bake for 25-30 minutes, turning once halfway through.
  10. Carefully remove the pipe from the from the oven and take out the bread parcel. Remove the foil wrapping and place the baked bread back into the pipe.
  11. Present the crispy, golden brown porn bread in a separate (warm) baking pipe with the almond-honey butter.
