How To Grill A Buffalo Steak

Buffalo is a great alternative to beef for people who want beefy taste without all the fat. Buffalo also has a sweeter flavor than beef, adding a little complexity to that burger or steak. The biggest problem that people tend to have with buffalo is that they cook it like beef, which cooks for longer due to the thicker intra-muscular fat on cows. Buffalo needs less time and lower heat on the grill. Just a few minutes on each side should yield the perfect medium-rare buffalo steak or burger. The color is going to be a lot redder than beef, so don't be surprised if your medium-rare buffalo steak is the same shade you would expect from an almost rare beef steak.

Ingredients
  • 1 12-ounce buffalo steak
  • 1 tablespoon olive oil
  • Salt and pepper
Directions
  1. Remove steak from package, rinse and pat dry.
  2. Drizzle olive oil on steak and season generously with salt and pepper.
  3. Loosely cover and let steak rest at room temperature for 2 hours.
  4. Preheat grill to 550 degrees.
  5. Place steak on grill, close lid and cook for 3 minutes.
  6. Turn steak and cook for an additional 2.5 minutes, for medium rare.
  7. Remove steak from grill, place on serving plate and cover for 1 minute before serving.
