Ingredients
  • 16 whole chicken wings
  • 2 tablespoons canola oil
  • 1/2 cup sweet paprika
  • 1/4 cup sea salt
  • 2 tablespoons garlic powder
  • 2 tablespoons freshly ground black pepper
  • 1 tablespoon all-purpose chicken spice
  • 2 tablespoons ground ginger
  • 2 tablespoons onion powder
  • 2 teaspoons dried rosemary
  • 3 tablespoons unsalted butter
  • 1 clove garlic
  • 1 cup pistachios
  • 1 cup honey
  • 2 squirts Sriracha
  • 1/2 teaspoon sea salt
Directions
  1. Fill a 6-quart sauce pan fitted with a steamer basket with an inch of water. Bring to a boil. 
  2. Place the wings in the steamer basket, cover, reduce heat to medium. Steam the wings for 10 minutes. Remove wings from basket and carefully pat them dry with paper towels.
  3. In a small bowl, combine the rub ingredients.
  4. In a large bowl, coat wings with the oil, then add the rub and toss to coat well. Place coated wings on a wire rack set in a baking sheet lined with paper towels, cover with plastic wrap, and refrigerate them for 3 hours or overnight.
  5. When ready to bake the wings, preheat oven to 425ºF.
  6. Replace the paper towels in the baking sheet with parchment paper. Return the racks to the baking sheets and put the wings in the middle rack of the oven.
  7. Roast wings on the middle rack for 20 minutes. Turn them over and roast until the wings are cooked through and the skin is golden brown, another 20 minutes.
  8. Melt the butter and combine with all other ingredients. Drizzle over the crispy wings to serve.
