Brown Babes Cocktail Recipe

When master mixologist Duane Fernandez from the Theater Bar in NYC was doing drinks research in Harlem, he came across an old recipe for this drink from The Cotton Club, the famed Harlem speakeasy. The recipe below is a twist on that recipe, using Disaronno, an amaretto-like liqueur. Flaming the orange peel before you garnish the drink with it not only looks cool, but releases and caramelizes the essentail oils from the orange.

To flame the orange peel, take a paring knife and peel the skin away from the orange, avoiding the white pith, which is bitter. Light a match and hold it about 4 inches from top of the drink. Squeeze the peel and touch it to the flame. The flame will flare up; that's the cue to run the peel around the rim of the glass and drop the peel into the drink.

A historical Harlem cocktail made from rye, Disaronno amaretto liqueur, and a flaming orange peel!
Total time: 5 minutes
Ingredients
  • 2 ounces rye
  • 1 ounce Disaronno
  • 1/2 ounce Antiqua Carpano vermouth
  • 2 dashes whiskey barrel bitters
  • orange peel for garnish
Directions
  1. Add all ingredients into a mixing glass and stir for 1 minute
  2. Pour into a coupe or martini glass
  3. Flame orange peel
  4. And serve
