Soda bread, check. Baileys, check. Ice cream, check.

Gearing up to make Irish food? Look no further than renowned chef/author Clodagh McKenna. Her latest book, Clodaghs Irish Kitchen, updates classic Irish dishes for the global palate. Basically, you wont be boiling any beef (or if you do, itll be for a good reason). Break out the Baileys and whip up a batch of your favorite new ice cream.

In any Irish kitchen there is always a stale piece of soda bread left over in the bread bin, which is a great excuse to make soda-bread ice cream. Roasting the bread crumbs with the brown sugar creates little crunchy speckles throughout. The Baileys adds depth, with coffee and caramel flavor and a silky texture. You can leave this out if you prefer, but it really is delicious.
