Last night, Zakary Pelaccio and writer-photographer Peter Barrett visited Facebook headquarters in Los Angeles to discuss their new book Project 258: Making Dinner at Fish & Game, live on our Facebook page. The two, both past Food Republic contributors, talk food waste, fermentation and more Zeitgeist-y topics in their fireside chat. Pelaccio, the successful NYC chef who decamped to Hudson, two hours north of Manhattan, also discusses his decision to quit the city for a simpler life.
