Fish Sauce

The flavors of Vietnam revolve around fish sauce, called nuoc mam. Fish sauce is made predominantly on the island of Phu Quoc, where freshly caught anchovies are placed in large barrels and pressed with salt for roughly a year. There are many brands available, but Red Boat is the one we’ve found chefs are most drawn to. They offer a “first-press” product that has been compared to extra virgin olive oil.
