Pho Kho Gia Lai
This dish is slightly elusive, so it was cool when a friend took us for a bowl (well, bowls) in Saigon. A first bowl contained dry pho noodles topped with bits of pork fat, bean sprouts and a chili paste. A second bowl arrived with a long-boiling soup, crystal clear like the finest consommé, with slices of pork and onions. Each is eaten separately.
