Cha Ca La Long

Another dish that is only found in the north, cha ca la long, takes a flaky fish fillet (typically catfish, but sometimes cod) and marinates it with dill, turmeric and galangal. The fish is then pan fried and served with sliced scallions. It’s an atypical flavor marriage that was made famous at a restaurant in Hanoi’s Old City, Cha Ca La Vong (14 Pho Cha Ca).
