While vegetarian Indian food is generally the way to go if you want something spicy and satisfying, the subcontinent does really impressive things with poultry. Classic chicken tikka masala just may be the perfect chicken recipe — debate its authenticity all you want. Pound out a fresh batch of garam masala in your trusty mortar and pestle (or just go to the Indian grocery store, whatever) and knock out an easy yet exotic dish for a delicious meal.

If you’re not used to the heat, whip up a batch of Cucumber-Carrot Raita to douse the flames — it works wonders. Wish we’d figured that out 5,000 years ago before we seared off half our taste buds.
