Docking is generally considered to be a bad thing — pay, points, etc. But in the baking world, if you're not docking, your pie's going to suck.
Docking is the act of making cuts or piercing tiny holes in dough or crust before baking. This process allows steam to escape which prevents the dough from rising as it bakes.
