Maquechoux is a popular Cajun vegetable dish made with fresh corn, garlic, celery, peppers and bacon grease. It's traditionally eaten in Louisiana (obvs) and at fine Cajun-style restaurants around the country. Crawfish tails or chicken is usually added too.
