Ah, we love the smell of "aged" fish in the morning. Seriously we do, once you taste bagoong, you will disregard the delightfully pungent smell and keep pouring on the sauce.
Bagoong (pronounced "bah-goh-ong") is a fish sauce condiment traditionally found in the Philippines. The sauce is made with anchovies, one of our favorite things in the world, which are cured and fermented for a pretty indefinite period of time. Hey, soy sauce. You've got some competition.
