Achar is a Hindi word meaning "pickle." To be clear, achar isn't your ordinary half-sour cuke. The spicy condiment is made from fruits or vegetables cut up into small pieces and cured in spices and acidic mustard oil. Sound good? Here's our favorite new way to use it.
