When we scream comfort food, we scream Knolselderijstamppot. It’s the Dutchest of all Dutch dishes. Let’s break this behemoth down.
This dish, a celeriac root mash, is a portmanteau (don’t tell us that needs to be a word of the day, too). Knolselderji is a celery plant from an edible root with a grassy, earthy smell. Stamppot is referred to the act of mashing vegetables (most often potatoes). If you put the two together you get Knolselderijstamppot, which means mashed potatoes and celery root, very tasty alongside roast chicken.
