Many of us still think that olive oil is still processed by a donkey pulling a stone wheel in a circle. Although a romantic thought, it misleads people in thinking that a stone wheel is the best way to extract oil from olives, also known as milling.

Let's be honest: the donkey days are over. Modern machines make milling easier, faster and healthier, thanks to the focus on general hygiene and efficiency. Modern milling consists of cleaning the olives, grinding them into a paste and separating the oil from the paste. Each step is controlled by a human being, with apologies to beasts of burdens' unemployment rates.
