A haystack is a dish made up of starchy foods (typically tortilla chips, rice or crackers) combined with fresh vegetables and protein (beans, cheese, taco-seasoned meat). This heap of food you know you recently threw together now has a name!
It's believed that haystacks were among the solution to the Great Depression food shortages by combining every ingredient in the kitchen to feed a family. Also a popular preparation in the Amish community, haystacks continue to resurface in areas where there is electricity... and plumbing. And cars.
