Liquid Nitro + Herbs At Vue De Monde

What's Going On: This was the palate-cleansing middle course from the degustation menu at Vue de Monde in Melbourne, where an assortment of herbs are placed in a bowl and liquid nitrogen (-196 degrees Celsius) is poured over, causing the mixture to freeze instantly. I was then asked to smash it all up with a mortar and pestle before cucumber sorbet was dolloped on top. Refreshing.
