What’s Going On: The kitchen at Melbourne’s newly opened Newmarket Hotel is a wild place during the heat of the 8PM crush—yelling, swearing, a wave a heat from the wood-fired oven blasting the staff. And all for the love of Latin flavors, which have become wildly popular in this Australian food town. Tacos, cocos and morcilla with chicharones was being turned out faster than you can say Speedy Gonzalez.
