Word Of The Day: Forno

Italian for oven, a la forno is used to describe food baked in the oven. So that would include all of our favorites: pizzas, breads, and many pasta dishes. Lasagna a dish commonly associated with being al forno. Because lasagna is cooked twice — once boiled, and then baked — it is difficult to produce al dente results. But that's okay because there's crispy, browned mozzarella on top.

The brick oven has become a symbol of the forno and is put to the best possible use when firing up wood-oven pizzas. Sorry, fried pizza.
