Word Of The Day: Fläskpannkaka

First of all, we love the sound of this word. This is Swedish for a very special kind of pancake, or pannkaka. In fact, we think all pancakes should be called pannkaka from now on. This particular pannkaka, the fläskpannkaka, is your dream pancake, i.e. a bacon pancake.

The Swedes cook pieces of bacon, or smoked pork, pour pancake batter over it and then cook the whole mess in a tray in the oven. This makes for a very large pancake, which can be cut up and shared, or you could try to eat the entire thing yourself. Traditionally, the fläskpannkaka is slathered with lingonberry jam and served for dinner on Thursdays.
