Word Of The Day: Timballo

A timballo represents the best marriage of food and music— an Italian pasta dish inspired by percussion. The name "timballo" comes out of the French word for kettle drum, timbale. As shown in the foodie movie Big Night, the drum-shaped dish is formed by lining a dome or springform pan with a sheet of pasta, filling it with layers of sausage, more pasta, meat sauce, bechamel, vegetables, and cheese and then covering it with another sheet of pasta and baking it. The result is an insanely good-looking pasta pie. This drum makes music of a different kind: your heart will definitely be beating faster post-timballo.
