Word Of The Day: Acidulated

In case you were worried that your water's pH was a little too normal, today's word of the day is acidulated. This refers to water that has had an acidic element added to it, most often lemon juice, lime juice or vinegar. It can be used to keep cut fruits from oxidizing (turning an unpleasant brown), or for cooking dishes like poached eggs to help the white coagulate. We're proud to poach our eggs in acidulated water.
