In modern cuisine, a mirepoix (pronounced MEE-ra-pwah) is a combination of chopped onions, carrots and celery, otherwise known as aromatics, used to add a preliminary layer of caramelized vegetable flavor to long-cooking dishes. Soups, stocks and sauces all benefit from this preparation.
Mirepoix originated in France (hence, the French), but several other cuisines lay claim to the veggie combo as well. Italian soffritto serves the same purpose, building rich flavors from the get-go. And of course, Cajun cuisine features the “holy trinity” of celery, onions and bell peppers.
