Chicken Parmesan Sub
When we published our easy chicken parmesan recipe, we left out one minor, if not obvious detail. Simply tuck the resulting goodness in a crisp baguette or nice fluffy Italian roll with some extra sauce and cheese and you've got one hearty sandwich, which is just how we like our sandwiches. We recommend you make a huge batch of this simple crowd-pleaser, serve it with pasta for dinner and the next day (or two) in a sub for lunch.
Our chicken parm recipe turned out so well (and so will yours) that we're making it today's What to Eat For Lunch and Sandwich of the Week. What do you mean we're just excited for the long weekend and we're being lazy? Nuh-uh. Well, maybe. But look this sandwich right in its meaty cross-section and tell us you don't have some strong feelings. Like hunger. Or immediate curiosity as to where the nearest pizza or sandwich spot might be. Get this craving out of your system now; we hear a thunderous stampede of several million psyched barbecue enthusiasts not so far away...
