The New York Times reported today that tough, overcooked pork is now officially your own fault. The US Department of Agriculture has updated its safety protocol, lowering the "safe" temperature of pork from a flavor-sucking 160 degrees down to a succulent 145...and we couldn't be happier! Prepare your barbecue and ready the fixins for the summer of tender chops!

That said, we still aren't springing for swine sashimi or trotter tartare, but we're certainly excited to get more excited when a dinner host mentions that sweet, sweet juicy pig's on the menu.
