- Lay a garlic clove on your cutting board with the flat side down and the curved side up.
- Take your chef’s knife and lay the flat side of the blade on top of the garlic clove. The garlic clove should be midway between the handle and the center of the blade.
- Holding the knife handle firmly, slap the heel of your free hand down and smash it against the garlic clove.
- Brush the detached skin away. Now you have a perfectly peeled clove ready for chopping.
