Last week we dropped our Chicago spring restaurants preview, which served to remind us of the city’s ever-evolving food and drink scene. From fine dining to barbecue to ramen to Indian hot chicken — yes, you read that right — the city will play host to an impressively diverse selection of restaurant openings this season. And people are certainly taking notice: This May, Chicago will be the site for the annual James Beard Awards for the first time ever. Food Republic has been there every step of the way over the years, reporting on the Windy City’s most acclaimed restaurants, bars and butcheries and interviewing many of its up-and-coming chefs (as well as one of its legendary hot dog creators).
