Making perfectly crisp and tender fried chicken is no easy task, even for an acclaimed chef like Louisville's Edward Lee. In this exclusive clip from the third season of The Mind of a Chef, which is produced by Food Republic parent company Zero Point Zero Production, Lee demonstrates his innovative technique for striking a better balance — by double-cooking the bird — en route to a very modern Asian-inspired spin on chicken and waffles.
