
You can't judge a sushi restaurant until you've had its chirashi, or chirashi don — the marriage of sashimi, omelet, fish roe and assorted vegetables artfully arranged over a bed of sushi rice. You might also find a blob of sea urchin, if you've been good, plus furikake and a lemon slice to season it all.
Aside from charcuterie platters and shellfish towers, chirashi is among the most aesthetically pleasing preparations in the vast world of Instagram.
