There’s oodles of folklore behind the tradition of eating lamb on Easter. Some of it’s fun, like the devil allegedly not being able to take the form of a lamb (neat!), and some of it’s even more fun, like entire branches of a Greek family coming together to skewer one whole and roast it over a fire. Everyone takes a “turn” turn. Gotta keep that lamb spinning.
For those of us unable or simply unwilling to dig a large fire pit over which to roast a whole beast, we have 11 Easter lamb recipes, from elegant and super-easy crown roast to meltingly tender stuffed belly. Some involve beautiful whole legs, others simply deal with the shank. Whichever you select, carry on this delicious holiday tradition with an impressive, meaty centerpiece.
