We recently drove about two hours north of New York City to visit with Josephine Proul, executive chef at the farm-to-table restaurant Local 111 in small-town Philmont. She offered to share one of the spring lineup's most popular dishes, a salad starring radishes that draws from Florida's in-season citrus.

I used barley because I didn’t have enough risotto in the pantry – feel free to use either, though barley is a far cheaper option. As for blue cheese, use whatever’s available to you – my favorite is Saint Agur. Serve with a bitter salad of escarole or radicchio and a glass of crisp white wine.
