I'm particularly proud of the Smashed Potato Bomb, as I am with Quesadillas Benedict, because I made it up on the spot and it took exactly 10 minutes to cook. Well, that's not entirely true, I had a leftover baked potato from the night before, so that shaved off about half an hour. After you bake the potato (or if you use leftovers), it takes 10 minutes.

Sunny-Side Nachos Recipe

Fried egg nachos are our new favorite brunch dish
May 4, 2013 10:01 am

There's no better place for a nachos cookbook than the shelves of the Food Republic library, and no better time for nachos than brunch. That's something we learned after making these Sunny Side Nachos, and we're better people for it.

Leave it to blogger and TV show host Lucinda Scala Quinn to feed us just the way we want. Her recipe for bacon-wrapped sausage, or Double Pork Sausage (which we actually prefer). When it comes to brunch, now you don't have to choose.

Normally we'd never endorse Hollandaise-in-a-packet, but you're finding soft-shell crabs for brunch, setting up a dredge station, frying and draining the things and poaching eggs. If we asked you to make real Hollandaise (read: we're asking you to make real Hollandaise) it might be a little much for a Saturday morning.

Russell Norman's cookbook, Polpo, may be named for his London restaurant (which is named after the Italian word for octopus), but there are many more recipes. Read on.

5 Breakfast Potato Recipes For Those Eggs

Eggs and potatoes for brunch today. Do it.
Apr 13, 2013 10:01 am

When it comes to eggs, toast only thinks it's king. Everyone knows a pile of potatoes soaks up runny yolk just as well, and there's no such thing as a toast galette with sage or toast and sausage hash. That's preposterous. So knock out a batch of potatoes before the eggs hit the pan, be they fried, scrambled, poached or otherwise and have a great brunch.

There's nothing like simple French food cooked in a tiny Paris kitchen, which is why we're loving cooking our way through Rachel Khoo's aptly named Little Paris Kitchen. Just because the French don't "do brunch" like we do doesn't mean a great weekend breakfast can't get a little fancy. Next up, Croque Madame Muffins.
