Chili, believe it or not, can spark some pretty heated debates. While some people are purists, the reality of chili is that it comes in many shades, varieties and names. Depending on where you live, it's going to be different. This recipe is not your standard on-top-of-cheese-fries fare, not that there's anything wrong with that. This is chili fresco Mexicano, and it is decidedly Mexican, spicy and delicious. I make it all the time.

Tonight, we're skipping whatever's in the bottle or jar. Homemade condiments are where it's at. Not ketchup, don't mess with bottled ketchup, it's perfect. But as far as the olive relish in the muffuletta quesadilla, chipotle sauce on that pork tenderloin or steak sauce you're planning to dip that grilled bacon in goes, DIY.     You know what they say: spicy food beats the heat. Whether or not that's less scientific fact and more plug for spicy foods (not that they need any) is irrelevent, because we're running with it all the way. Tonight, deep-fry some spicy General Tso-style chicken, grill it island-style, grind it and mix with chili paste for lettuce wraps or stuff it into a sandwich with pickled chilis. Capsaicin's natural painkillers are a great remedy for that sunburn.
