Tonight, we're skipping whatever's in the bottle or jar. Homemade condiments are where it's at. Not ketchup, don't mess with bottled ketchup, it's perfect. But as far as the olive relish in the muffuletta quesadilla, chipotle sauce on that pork tenderloin or steak sauce you're planning to dip that grilled bacon in goes, DIY. Love that peanut stuff that comes with Thai chicken satay. You're in luck.

    It's hot out, so cook your food (or don't) accordingly. The big winners this week were ceviche (which is "cooked" with acid) and blowtorch salmon sashimi, which is exactly what it sounds like. A little crème brûlée torch won't heat the kitchen up much, unless you set your curtains on fire or something and fruit may be in high season, but don't let that stop you from frying up rich, buttery duck eggs with hearty blood sausage for brunch tomorrow.     You know what they say: spicy food beats the heat. Whether or not that's less scientific fact and more plug for spicy foods (not that they need any) is irrelevent, because we're running with it all the way. Tonight, deep-fry some spicy General Tso-style chicken, grill it island-style, grind it and mix with chili paste for lettuce wraps or stuff it into a sandwich with pickled chilis. Capsaicin's natural painkillers are a great remedy for that sunburn.
