Test Kitchen days are great days at Food Republic. The aromas, clanking of pots, chopping noises and constant swearing on my end make for a productive day of food writing (and excellent lunching) for us all. We're holing up inside this weekend, yielding to the weather gods, and planning to take on one of our serious kitchen projects. The "project" part can involve anything from sourcing a hard-to-find ingredient like fresh goat meat, Mexican huitlacoche or Greek grape molasses, baking and frying salmon skin for chips or passing country ham fat-infused biscuit dough through a pasta roller over and over (the recipe calls for 200 times — take that as you will).
