We stumbled upon what appears to be the perfect Italian stuffed cherry pepper recipe from Chef Doug Psaltis at Chicago's RPM Italian restaurant. One of the great things about spring menus is all the tender, fresh green vegetable dishes. Longstanding Midtown dining spot Michael's New York, owned by restaurateur Michael McCarty, boasts a Dutch recipe we had to try: citrus-steamed Dutch white asparagus (they actually do a mix of white and green) with a wine-spiked butter sauce, a runny poached egg and a little Parmesan cheese. A little prosciutto never hurt anyone, either.

Once, I ordered bacon on a sandwich and received three strips of greasy, rubbery gristle. I didn't think anything could ruin bacon except experiencing it in that condition. When I realized bacon was ruined for a little while, but not crispy pig entirely, I started oven-baking prosciutto slices. I'd like to come clean right off the bat and admit some things I've wrapped in prosciutto. These were different days, wild days. Once, I covered a hard-boiled egg with prosciutto, breaded and deep-fried it in attempt to make an Italian Scotch egg. It promptly exploded — prosciutto's like shrink wrap.

Placing your starter of choice on a meaty shard of oven-crisped prosciutto will delight everyone from glutard to body-builder (and irritate every vegetarian and vegan to boot). Using dense, ashy smoked mozzarella rather than its fresh counterpart ensures a nice, crispy chip.
