Boulud Sud's Aaron Chambers On How To Make Lamb Kebabs

Middle Eastern–style grilled lamb skewers at home
May 15, 2013 12:01 pm

"I was a vegetarian for 19 years," says Aaron Chambers, Executive Chef at Boulud Sud across from NYC's Lincoln Center. Of course, things have changed now that he heads the kitchen at Daniel Boulud's Mediterranean-influenced restaurant, where spice-marinated flame-grilled Colorado lamb kebabs are not to be missed. We followed him around the kitchen to learn the recipe.

Salad For Lunch: 3 New Ways To Do Tabouli

Take the classic Middle Eastern salad for a spin
May 6, 2013 11:31 am

Tabouli is one of those dishes with a million recipes. The Middle Eastern salad screams warm weather so loudly it's genuinely hard to enjoy it in the colder months. Also, winter produce sucks, and this is a produce-heavy situation: your own ratios of finely chopped parsley and mint, diced cucumber, tomato, onions or scallions and tons of extra-virgin olive oil, fresh lemon juice, salt and pepper, plus your preferred amount of the following options.

Is Camel Milk The Next Big Food Craze?

An ancient food may be hitting our shores
Apr 22, 2013 12:31 pm

For centuries, people living in the area now known as United Arab Emirates have consumed camel milk for its nutritional benefits (it’s supposed to fight cancer) and ability to refresh in the parching Arabian heat. With less fat than whole cow’s milk, the consistency is similar to skim, but with an after taste that is described by some as “sharp.” But we wouldn’t know — the stuff is nearly impossibly to find in the United States. Until now.

Mark our words: bulgur is the new quinoa. In Turkey, it is common to see bulgur served instead of rice, or stuffed into various veggies. Another common way of eating bulgur is in the form of meat(less) meatballs. These hearty meatballs rival any meatball, but instead contain no saturated fat and are veggie-friendly. Give them a try and you won't be disappointed.

28 Mediterranean Recipes To Help You Make It Through The Winter

The only thing missing is a sandy beach

It’s rare that a popular diet is not accompanied by its fair share of doubters and critics, skeptical of the benefits and quick to point out possible risks. If one such plan has remained relatively free of controversy, however, it is the Mediterranean diet. Advocating a high intake of olive oil, legumes, fruits, vegetables and moderate consumption of fish and dairy products — plus, red wine! — the diet can reduce the chance of suffering from heart disease and cancer.

Ancient Bagel Predecessor: Turkish Simit

Before there were bagels, simit ruled the land
Feb 20, 2013 12:32 pm

I'm a big fan of breakfast for lunch. Cause that means you can pull off a great sandwich for dinner and raid the fridge with all your heart at 3 in the morning. Simit, this bagel-esque baked good known by many names throughout the Middle East, is the national breakfast dish of Turkey. A simit spot I'll probably still call a bagel spot for a while just opened up in my neighborhood, and boy does my typical Sunday 2 p.m. breakfast have some competition! Here are some ideas for this very old new ring of dough.

Here's How They Make Those Giant Doner Kebabs

A doner story so legit you'll still crave it after
Feb 7, 2013 12:31 pm

There's a perfectly logical translation for doner. It's not "greatest drunk food of all time," or "just paid rent and now have no money." It means "to spin, rotate or otherwise turn around." Investigating how doner is made made me all the more adamant about eating it for lunch today. Everyone likes a success story.
