Last Thursday, Chairwoman of the Senate Committee on Agriculture, Debbie Stabenow (D-MI), and Ranking Member Pat Roberts (R-KS) unveiled their 900-page revision of the farm bill for the Senate Ag committee’s vote. At least $23 billion in cuts are expected in this year's farm bill and at stake is funding for local food programs, nutrition (like food stamps) and conservation.

The kitchen staff at Westport, CT farm-to-table temple The Dressing Room doesn’t have the luxury to cook with fresh tomatoes all year round. But to prepare this wildly popular dish year round, they buy “as many tomatoes as possible” in the summer and Cryovacs them for later, according to Executive Chef Jon Vaast. It's best served with a mini grilled cheese sandwich. Obvs.

It’s why he got up before dawn and crashed into bed far past midnight. As any champion toques or rising line cook will tell you, cooking professionally at restaurants is the life. And it’s pretty damn addictive. To quit? That’s just not an option.
