Miami Chef Michael Schwartz Launches A Craft Beer

Michael's Genuine Home Brew is available in bottles
Sep 10, 2013 3:00 pm

Here's a trend we can get behind: Popular local restaurant creates its own craft beer; it becomes popular with customers; the restaurant starts to bottle the beer and aims to increase distribution as demand increases. That's the trajectory of Michael's Genuine Home Brew, the year-old creation of chef Michael Schwartz and his team at Miami's Michael's Genuine Food and Drink. Details after the jump.

Miami's own JBF-winning Michael Schwartz serves up brunch at The Raleigh Hotel in South Beach like only he can — the famed restaurateur knows his way around fancy eggs. We snagged this delectable offering right off the menu: velvety potato hash spiked with sweet crab is the perfect bed for the eggs we're so good at poaching.

Another Vote In Favor Of Pop-Up Restaurants

April Bloomfield in Miami with Michael Schwartz
Feb 22, 2013 1:01 pm

Last night, two of our favorite chefs on the planet joined forces to make pizza, when April Bloomfield became the latest out-of-town guest chef at Michael Schwartz's Harry's Pizzeria. We couldn't be there ourselves, unfortunately — hey, we can't be everywhere! — but we spotted Genuine Hospitality Group's Jackie Sayet's post on the Michael's Genuine site touting the "Spotted Pig Pizzeria in Pictures."

This recipe makes a Twinkie snack cake with a Southern twist. Working in Miami as a pastry chef, I quickly became familiar with this local favorite, and the classic Twinkie has benefited from my conversion. Goat cheese adds a wonderful tang to the traditional cream cheese filling and elevates it to a whole new level.

Who took home the prince of pork title in Miami?

Cochon 555 is a 10-city tour that is lardcore to the core. It’s a type of offal exhibition rarely seen outside of a Fergus Henderson birthday party. At each of the stops five local chefs compete with one goal in mind—to cook every last morsel of a particular breed of heritage hog like Red Wattle, Hampshire and Berkshire.

A Gourmand's Guide To Art Basel

Eating & drinking my way through Miami's art scene

People always ask me after how Art Basel was. As far as I’m concerned, it’s a rhetorical question: Art Basel’s always an amazing, mind-blowing collision of art, culture, commerce, schmoozing, drinking, eating and dreaming (mainly of being able to afford the art), and it couldn't be anything else.

True Michael's aficionados know that wood-fired is the surefire way to eat well here: the pizzas and whole snapper, for instance. And then there's the pancetta roasted brussels sprouts.
