“I was starting to be known as the meat guy,” admits British cookbook author and food television presenter Hugh Fearnley-Whittingstall as we share a booth at the Spotted Pig in New York's West Village. In the U.K., Hugh is famous for his River Cottage television series — where he cooks from his Devon headquarters (the cottage) while instilling a “back to basics” ethic. He was in town to cook a whole bunch of vegetables.

It predates the guy who invented Tumblr being born. Ken Friedman, a former music executive and partner in The Spotted Pig and The Breslin, has been at the center of this world for the past three decades.

Each offer a dining-with-benefits experience — exceptionally flavorful and decadent cooking (pork topped with runny eggs seems to be a go-to prep), served in sharply designed dining rooms packed with celebrities of the screen and social web.
