Summer Fresh: Rocket Salad With Melon

Ingredients
  • 1/2 cantaloupe melon
  • 4-6 slices prosciutto
  • A handful rocket
  • olive oil
  • Raw baby peas or broad beans (optional)
Directions
  1. Peel the melon and shave the flesh into thin strips with a vegetable peeler. Rip the prosciutto into strips and arrange on a serving plate with the melon, gently folding through the rocket.
  2. Serve drizzled with olive oil, and scattered with peas or beans if you’re using them.
