Kare Kare Chicken Wings Recipe

Eric Pascual was born and raised in the Bay Area and spent a good amount of his childhood in Hawaii. Growing up in a household with working parents, Pascual began learning to cook. Eventually this responsibility became a curiosity and later, a passion. Pascual loves to share his style of cooking through pop-up dinners he hosts through the Feastly network, a site that connects "feasters" with chefs for unique dinner parties.

"This dish was inspired by my love for chicken wings and a popular Filipino dish called Kare Kare [pronounced kar-eh kar-eh]," says the chef. "The traditional Kare Kare dish is a stew made with slow-cooked oxtail in a peanut sauce. This dish works great as a snack or even a main course."

Ingredients
  • 4 pounds chicken wings
  • 5 cloves garlic
  • 1 teaspoon ginger
  • 2 tablespoons olive oil
  • 1 tablespoon sea salt
  • 1 tablespoon black pepper
  • 1 teaspoon cayenne pepper
  • vegetable oil (if frying)
  • 3 1/4 cups chicken stock or broth
  • 1 3/4 cups plus 2 tablespoons peanut butter
  • 2 tablespoons fish sauce (or 2 teaspoons sea salt)
  • 1 tablespoon salted shrimp paste (optional)
  • 2 tablespoons oil
  • 3 cloves garlic
  • 2 tablespoons fresh onion
Directions
  1. Combine all ingredients for the marinade and marinate for at least 12 hours.
  2. Preheat oven to 400°F.
  3. Set a wire rack inside each of 2 large rimmed baking sheets.
  4. Divide wings between prepared racks and spread out in a single layer.
  5. Bake wings until cooked through and skin is crispy, 45-50 minutes.
  6. Line another rimmed baking sheet with foil; top with a wire rack.
  7. Add wings to sauce (see recipe below) and toss to evenly coat.
  8. Place wings in a single layer on prepared rack and bake for an additional  8 minutes.
  9. Brush on additional sauce if needed.
  10. Combine all ingredients for the marinade and marinate for at least 12 hours.
  11. Heat oil in a deep fryer at 375°F.
  12. Use enough oil to cover the wings entirely.
  13. Put all the wings into the hot oil and fry them for 10-15 minutes or until some parts of the wings begin to turn dark brown.
  14. Remove the wings from the oil to a paper towel to drain.
  15. Submerge the wings in sauce and evenly coat.
  16. Serve and enjoy.
  17. Heat oil in a saucepan over high heat.
  18. Once oil is heated, add in garlic and onions.
  19. Once onions are transparent and garlic is slightly browned, add in all remaining ingredients and bring to a boil.
  20. Reduce heat to low; simmer, stirring occasionally, until sauce starts to thicken.
  21. Add any additional salt and pepper to taste.
