Uh-Oh, I Really Like Marinating Chicken In Bud Light Lime-A-Rita

Well this is just ridiculous. I got a can of Bud Light Lime-A-Rita in some kind of demented goody bag and was about to chuck it when I realized I had nothing with which to marinate that night's chicken. Well, I had olive oil and a lemon and some dried herbs. But that's boring. That green and white can suddenly had potential.

Everyone knows that beer makes a great marinade. While this stuff isn't exactly beer (I'm actually not sure if it's supposed to be beer at all), the added ingredients of tons of sugar and lime juice actually work to its advantage. The alcohol and acid tenderize the chicken, the sugar sinks in and, when grilled, creates a delicious crispy crust. I poured the can into a large zip-top bag and added chicken legs and thighs, some smashed peppercorns, Kosher salt, lemon zest, cayenne pepper and yes, a splash of tequila because are we doing this Lime-A-Rita thing right or not? Tell me the right way!!!

Marinate for 3-6 hours and toss on a hot grill until cooked through. The result is sweet, tangy, very juicy chicken perfect with a few great side dishes or shredded for tacos or burritos. Be creative, add some ground cumin or toss in a couple of chipotle peppers. And to drink? These delicious actually Mexican-themed beers won't let you down.
