Ingredients

Honey Lemon Dressing
1/4 cup avocado oil
1 tablespoon fresh lemon zest
1 tablespoon lemon juice
2 teaspoons honey
Salad
2 large oranges
1 English cucumber
2 cups fresh mint, loosely packed
Directions: 

For the honey lemon dressing:

  1. Place ingredients in a screw-top jar. Shake well.

For the sweet cucumber and orange salad:

  1. Make honey lemon dressing.
  2. Segment oranges over small bowl. Reserve juice.
  3. Use vegetable peeler to cut cucumber into thin ribbons.
  4. Place cucumber in medium bowl with mint, orange segments, reserved juice and dressing.
  5. Toss gently to combine.
  6. Season to taste.
