“I make real pizza Neapolitana,” says Motorino piazzolla Sergio Pardo. In fact, he makes between 400 and 500 pizzas a day, which is an incredible feat for anybody who has ever attempted to make one pizza a day. Pizza making is a fine art — like pottery and animated cat .gifs. It takes time and patience and Pardo is on his way to become a Delacroix with sauce and dough. In this video from Eater’s A Shift With series, Pardo talks about the pizza-making process and reveals his plans for bringing his iconic pies to Mexico. And that is hardly a pie in the sky dream. Mmmm, pie. Pizza pie!
