We’re big fans of Instagram, especially for documenting the great things we’re eating and drinking in our New York hometown or on the road. Think slicing porchetta at a friend’s housegyros in Astoria and farmer’s markets gone wild.

We’ve also found that chefs are into Instagram too. That’s why we’ve asked our man John Besh to take over our account. If you didn’t know the New Orleans–based chef, he is one of the most decorated food figures in the American South — having been recognized by the James Beard Foundation on multiple occasions for his cooking — which is grounded in the great traditions of France.

But today Besh travels to Mexico with his friend Aarón Sanchez (of Chopped fame). They are on a research and development mission to inspire their forthcoming joint venture, Johnny Sanchez tacos and tequila bar. When reached at the airport, Besh says he’s been to Mexico countless times, but this is his first “insider” trip to Guadalajara. We look forward to our Instagram feed seeing a 100% increase in pineapple-laced tacos al pastor and fried grasshopper imagery.
