Those French. They have a sauce for everything, and a name for every sauce. This one's a great one though, we love it when heavy cream meets tomato. World, meet aurore.

Aurore is a béchamel sauce with tomato purée, otherwise known as concasse, added to it. It's perfect for an egg, chicken, fish or pasta dish, since it clings better to its host than a sauce that isn't made of butter, flour and cream.
